Bake With Me! - Cheesecake

Have you got friends coming over? Need to take dessert to a party? Or do you just fancy a treat? Don't worry, I've got you covered! Cheesecake is one of my favourite things to make and it's super easy too. Not only that, the varieties are endless. I have chosen to make a Kinder Bueno one in this post.

Basic Recipe

300g of your chosen biscuits
150g unsalted butter

500g cream cheese 
1tsp vanilla extract
100g icing sugar
300ml double cream
250g of your chosen melted chocolate/spread
Chocolate pieces (optional)

Decoration (optional):
150ml double cream
2tbsp icing sugar
Chosen toppings 


1) Crush your biscuits with the end of a rolling pin, or put them into a food processor, until they look like breadcrumbs. I used digestives in this variation, but this can easily be substituted with another kind of biscuit to match your chosen flavour. I have used Oreos and Biscoff Lotus biscuits in some of the other variations that I have made.

2) Put the butter in the microwave for short bursts of 10-20 seconds until completely melted and add to your biscuits.

3) Grease a round tin and press the base firmly and evenly into the bottom. I use a tin that is 7.5cm deep with a 19cm diameter and that seems to be the perfect size for this recipe. I would also suggest using a tin that either unfolds or that you can push up from the bottom, otherwise you will not be able to remove your cheesecake.

4) Now moving onto the filling. The first thing that you will need to decide on is how you are going to flavour your cheesecake. In this variation I have chosen to use 250g of melted Kinder chocolate and pieces of Kinder Bueno bars. The chocolate can be changed depending on your choice and I have also used 250g of a flavoured spread before too. The pieces of chocolate are also optional. If you would prefer a smoother texture, then just stick to using the melted chocolate or spread to flavour your filling. So, once you have decided on your variation, melt the chocolate or spread in the microwave for short bursts and leave to one side to cool slightly before adding to the rest of the mix.

5) Whilst this is cooling, it's time to make the basic cheesecake filling. Start by adding the cream cheese, icing sugar and vanilla extract to a large mixing bowl, and use an electric whisk to combine the ingredients. 

6) Then add your melted chocolate/spread and whisk again. 

7) That's nearly all for the filling, now we just need to add the cream. Using your electric whisk again, mix in the cream until you have a smooth and stiff consistency. Make peaks in the mixture as you remove the whisk and if these hold their shape then you are good to go.

8) This is where you can add your chocolate if you have decided to include this. If not, move onto step 9. Break your chosen chocolate into pieces and fold into the mixture.

9) Pour the cheesecake filling into your tin and smooth it out. Leave to chill for at least 5-6 hours, but try and leave it overnight if you can.

10) Time for the fun part! Decorating is optional and you can, of course, just serve the cheesecake as it is. If you are going to decorate, I would suggest removing the cheesecake from the tin first, as this will make it a lot easier. I like to make a bit of a masterpiece when I bake, so I always tend to decorate my cheesecake. I usually make some fresh cream to pipe onto each slice. To do this I pour 150ml of double cream into a large mixing bowl, add 2 tablespoons of icing sugar and whip using an electric whisk until the mixture is smooth and holds it's shape. I will then put this into a piping bag and pipe onto the top of the cheesecake.

11) I also added some Kinder Bueno pieces onto each slice and crushed up some Kinder Eggs in the centre.
