Blogmas Day 3 - Bake With Me! Gingerbread Cupcakes

Hi Guys and welcome to Blogmas Day 3!

I am back with another baking post; Gingerbread cupcakes. So lets get started.


Ingredients:

Cupcakes:
2 Eggs
110g Self-Raising Flour
1/2 Tsp Baking Powder
110g Butter, softened
110g Sugar
Zest of 1 Orange

To Decorate:
50g Unsalted Butter
80ml Cream
1/2 Tsp Vanilla Extract
350g Icing Sugar
Red Food Dye
12 Mini Gingerbread Men Biscuits
24 Coloured Chocolate Beans
24 Sugar Pearls
1 Tube White Decorating Icing


Method:

1) Preheat the oven to 170°C/325F/gas 3.

2) Put all the cupcake ingredients into a bowl and mix well.

3) Place 12 cupcake cases into a cupcake tin and spoon out the mixture evenly. Bake for 20-25 minutes until golden and springy to touch. If you're not sure, stick a knife down the middle and it should come out clean. Place on a wire rack to cool.


4) For the buttercream, beat the butter until soft and creamy.

5) Beat in the cream and vanilla until blended. Sift in the icing sugar and beat until smooth. I found that the icing was not soft enough to pipe, so if this happens just add a splash more cream.

6) Put half the mixture into another bowl and add a few drops of red food dye.


7) Spoon the buttercream into 2 piping bags. Pipe a swirl of white buttercream onto the centre of each cake and then use the red icing to pipe stars around the outside.

8) Decorate each gingerbread man as you wish and carefully place on top of each cake. At first I found that the gingerbread men were sliding off of the cakes. To make this easier I got a knife to put a slit into each cupcake and pushed the gingerbread men in.
